Easter.



Commonly known as Easter, the Easter Triduum is a three-day period from Thursday to Sunday, marking the end of Lent.

This is one of the times when Matoutou is eaten (the other being Pentecost, 50 days later).
Matoutou is a traditional dish whose main ingredient is crab.
Land crabs are first caught, fed fruit, vegetables and bread while they purge, then killed and cleaned to prepare the dish.
A large pot is filled with colombo paste or powder, garlic, bouquet garni, Indian wood and other ingredients, which are then cooked.
Once ready, Matoutou is served with rice.
The most important part of the crab is the “Gwo Mòdan”, the crab's largest claw.
